SPECIALITIES FROM THE MARCHES
The place of origin of “Porchetta” is between Macerata and Ascoli Piceno, typical of Roman cuisine but invented here in The Marches.
Pork is used extensively here, especially for the production of any kind of cold cuts. This region is highly specialised in roasts and skewers. The use of the “pilotto” is widespread, a piece of lard wrapped in butcher’s yellow paper, the paper is burnt and the fat oozes onto the meat cooking on the skewer.
“Olive all’ascolana” are extremely pulpy green olives, produced locally, cut in spirals and stuffed with a rich filling based on meat and cold cuts and then reassembled, rolled in breadcrumbs and fried.
